  1. In a large skillet cook the bacon to a desired crispness; remove from pan and drain on paper towel-lined plate. Break up bacon in pieces when cool enough to handle.
  2. Add green onions to bacon fat and cook until tender, about 1 minute. Remove and set aside.
  3. Season chicken with salt and pepper and add to pan with bacon fat; brown chicken on both sides, about 2 minutes per side. Remove from pan and set aside.
  4. Arrange peppers, carrots, onions, mushrooms, potatoes and garlic in the slow cooker; season with salt, black pepper, and thyme.
  5. Add chicken to slow cooker and layer the crumbled bacon and green onions on top.
  6. Pour in chicken broth. Cover and cook on high for 3 h
  7. Pour in the wine and cook for another 30 minutes to an hour.
  8. Transfer chicken to a cutting board and shred it.
  9. Stir chicken back into the slow cooker and serve.
